I have never known fiberglass to smell, but maybe that version does have a speciality binder - I am not sure
Teeth gnashing is generally a stress symptom &/or habit that many don't realize that they do until brought up
The smell though - I am assuming this is an older house, or did they do a comple gut & use the foam caulking? If it's the new foam caulking system, that might be an issue (do they have an ERV or HRV?) As for an older house, once the walls are drilled into & material stars blowing in, a lot of bad items can blow back out, not to mention a failure to deal with water issues before hand - they may have just made it worst.
